Kinder Kitchen Healthy Kid's Recipe - easy leek and potato soup

Of all the soups I make, this is an easy one and one that my kids love. This recipe makes enough for all the family with lots left over. I usually freeze some and the rest can be kept in the fridge for a good couple of days.

Easy leek and potato soup

Ingredients:

2 tbsp butter
1 clove garlic (crushed or grated)
1 lb (pound) leeks (2-3 depending on size)
1 lb (pound) potatoes (3-4 depending on size)
1 pint stock (vegetable or chicken)
Salt and pepper to taste
½ pint milk
Method:
 
  1. Wash the leeks and potatoes and slice both into chunks
  2. Add the butter to the pan and then the potatoes and leeks and cook them with the lid on for ten minutes (allow them to sweat) on a low heat stirring regularly
  3. Then add all the other ingredients (apart from the milk) bringing it to boil and them simmering the soup until the vegetables are all tender (20-30 minutes)
  4. Add the milk and cook for a further 5 minutes
  5. Before blending add any more seasoning (salt and pepper) if needed
Kinder Kitchen Tip:
 
Serve with toast and a sprinkling of sesame seeds. Yum!
