Today's nutritious recipe from Kinder Kitchen - easy courgette and chocolate cake

Now, most of the recipes I put up onto my blog are simple and healthy. This is simple to make but maybe not the healthiest. This is something for us mums but the kids will enjoy too. Not only are you getting your chocolate fix, but your children are getting some greens at the same time. The sunflower oil ensures that the cake stays moist. Dark chocolate is healthier than milk chocolate as it has a higher cocoa level. It also has a few more ingredients than I'd normally use but it is worth it!
 
Easy courgette and chocolate cake
 
Ingredients:
 
120g butter (room temperature)
125ml sunflower oil
250g caster sugar
3 eggs
130ml milk
350g plain flour
2 tsp baking powder
5 tbsp cocoa powder
500g courgettes, grated and peeled
1 tsp vanilla
 
Method:
  1. Grease or line a 20x35cm baking tray with parchment and set the oven to 190 C / Gas mark 5
  2. Mix the butter, oil and sugar together until light and fluffy. Then add the eggs one by one and then the milk until mixed thoroughly
  3. Now sift the flour, baking and cocoa powder into the mixture and fold in. Add the courgettes, vanilla and spoon into greased tin. Bake for 1 hr. If still a little wet cook for 5 minutes more
  4. Serve warm and enjoy!
