Healthy kids recipes - easy celery, leek and tomato sauceA winner with all children |
Ingredients:
1 small onion, chopped
3 stalks of celery, washed and sliced
1 large leek, washed and sliced
2 tins of canned plum tomatoes
2 tbsp of tomato ketchup (optional)
1 clove of garlic, crushed (optional)
Salt and pepper to taste (optional)
Method:
- Fry the onions, celery and leek in a little olive oil on a medium heat for 10 minutes
- Add the crushed garlic, tinned tomatoes, ketchup, salt and pepper
- Place a lid on the pan and allow to simmer on a low heat for at least an hour. (The longer you leave it the better it will taste) Remember to stir occasionally so that the sauce does not stick to the bottom of the pan
- Before serving, blend it with a hand blender or in a liquidiser
- Poor onto pasta and serve with a sprinkling of parmesan or your choice of cheese

Great idea. I have always just used onions and tinned tomatoes and will now add other vegetables I have in my fridge.
this was really good. It had a lot more flavour than other tomato sauces i've tried
