Healthy kids recipe - easy drop scones with strawberries
When I get the time, we all like to eat fresh drop scones for breakfast. I am always saying that things are easy but these really are. You literally put all the ingredients in a bowl, mix and cook in a frying-pan - your kids will love them!
Ingredients:
A small mug of self-raising flour
A small mug of milk
2 eggs
A pinch of salt (optional)
A handful of strawberries
A drizzle of honey
Preparation:
1. Place all the ingredients in a bowl and mix together. If you do not have an electric whisk, a hand-blender does the job just as well. Leave to rest for ten minutes. Small bubbles will appear in the mixture. These are air bubbles
2. Place a little oil or butter in a frying pan on a medium heat and pour a little of the mixture in. Check the underneath and when light brown flip over and cook for the same amount of time until they have slightly risen
4. Serve with sliced strawberries and a drizzle of honey
Suggestions:
You could also serve with golden syrup and any other fruit you have to hand

As you say, really easy to make and delicious. Great for the weekends when you have a little more time.
