Kinder Kitchen Healthy Kid's Recipe - easy vegetable soup

My one year old will not eat vegetables with his meals. He throws anything green in colour on to the floor. To make sure he gets his weekly nutrients I make a soup containing lots of goodies.

This broccoli soup has been my lifesaver and by adding grated cheese on top it seems to work. Croutons are also a winner as they like picking them out.

Easy vegetable soup
 
Ingredients:
1 onion
2 sticks of celery
2 peeled carrots
2 peeled potatoes
Half a head of broccoli
A teaspoon of butter and oil
Chicken or vegetable stock
 
 
Method:
  1. Wash the vegetables and chop them up as small as possible
  2. Add the oil and butter to a saucepan and add all the vegetables apart from the broccoli. Cook them with the lid on for 15 minutes on a low heat
  3. Now add the broccoli and enough stock to cover the vegetables and simmer for 20-30 minutes or until the vegetables are soft
  4. Blend with a hand-blender and serve
Serving suggestions:
 
My two children love cheese so I grate some cheddar or parmesan onto the soup which they love.
  
Kinder Kitchen Top Tip: 
 
You can add any vegetables that need using up to the soup and play around with the amounts you use. The butter usually gives the soup a creamer taste. To this soup I added kale which he lapped up with no complaints ;-)
